The Miyabi 600S Morimoto Edition integrates a Western style riveted handle, full tang, bolster and Friodur ice-hardened special formula steel with traditional Japanese knife designs honed for durable sharpness by the time-honoured Honbazuke technique. These finer blades are tapered to a more acute edge angle (10 -12 degrees on each side) to enable more precise cutting; perfect for the demands of fusion cuisine or everyday meals.
