It seems as if a new study is released every week telling us how healthy the Mediterranean diet is for us.  Foods rich in Omega 3’s, fresh fruits, vegetables and nuts all play a starring role.  Our first class of the season will offer some illumination into this varied and wonderful cuisine.  Recipes will include Rustic Minestrone Soup, Panko and Pine Nut Crusted Mozzarella with Arugula and Oven Roasted Tomatoes, Seared Halibut with White Beans and Citrus Buerre Blanc, and Ricotta Stuffed Honey Almond Peaches.
